Chicken with White Wine & Wholegrain Mustard Sauce

1 x Chicken Breast
½ dstsp White Wine & Wholegrain Mustard Sauce
5ml Single Cream

Place one chicken breast (with skin on) in frying pan with 1 tbsp olive oil. Fry until brown on both sides, pour in cream and mustard sauce. Heat for a few minutes, check chicken is cooked and serve.

Gammon with Apple Chutney

4 x Gammon Steaks
1 Jar Apple Chutney

Place steaks on baking sheet and grill until cooked on one side. Turn and cover with Apple Chutney, grill until the chutney is bubbling and brown.

Lemon Drizzle Cake

5oz/140g Self Raising Flour
1 tsp Baking Powder
4oz/110g Margarine
4oz/110g Caster Sugar
1 / 2 tbsp Lemon Curd
Grated rind of 1 Lemon
2 Eggs
1 tbsp Water

Syrup for the top: Juice 1 lemon & 2oz/60g Granulated sugar

Put all ingredients in a bowl and mix until creamy consistency. Transfer into a greased and lined 2lb loaf tin. Bake for 45 minutes, Oven 160c/325f or Gas mark 3. Make the syrup by mixing the lemon juice and sugar. Pour over the cake whilst still hot from the oven.

 

Duck with Orange & Chilli Glaze

1 x Duck Breast
1 x Jar of Marmalade
1 x Red Chilli
1 x Lemon
1/2oz of Fresh Ginger

Prick duck breast and place in roasting tin. Mix the marmalade, chilli and lemon juice in pan, heat. Brush on the glaze over the duck. Place in hot oven, periodically place more glaze on duck.

Chicken Drumsticks with BBQ Sauce

1 x Jar of BBQ Sauce
4 x Chicken Drumsticks

Place drumsticks in an over proof dish and spoon BBQ sauce over them, turn drumsticks to coat in sauce. Cover and leave to marinade for 3 hours (or more). Cook in a pre-heated over 190c/375f or Gas mark 5 for 30 minutes. Finish cooking on barbecue if desired. Turn an baste throughout cooking. Cover if they being to brown too quickly.

Chocolate & Cherry Muffins

6oz Self Raising Flour
2oz Melted Butter
4oz/110g Cherry Jam
1 Beaten Egg
4floz Milk
2oz Melted Chocolate
1oz Chocolate Chips - to decorate


Place all ingredients in food processor until mixed. Fill muffin cups with mixture and place chocolate chips on each one. Bake in oven 200c/400f, Gas mark 6 for 20 minutes. Top with dots of jam and chocolate chips. Eat on day of making. Why not substitute Cherry Jam for Lemon Curd and not use the Chocolate chips?
